Black Eyed Beans-Sparta Style
1 lb. dry black-eyed beans
1 lg. onion, chopped
½ c. olive oil
1 T. oregano
½ can (3 oz.) tomato paste or
1 (No. 2) can tomatoes
Salt & pepper to taste
Wash beans and cover with water. Bring to a fast boil. Simmer 10
minutes. Drain and save liquid. Saute onion in oil until
lightly browned. Add drained beans, oregano, tomato paste and enough
liquid from beans to barely cover. Simmer
slowly until beans are tender. Season with salt and pepper.
