Lenten Honey Cookies
1 c. solid vegetable shortening
1 ½ c. vegetable oil
¾ c. orange juice
3 T. sugar
1 tsp. baking powder
1 tsp. baking soda
3 c. sifted all-purpose flour
4 c. sifted cake flour
1 c. finely-chopped walnuts
Syrup:
2 c. sugar
2 c. water
2/3 c. honey
Syrup: Boil sugar, water and honey. Allow syrup to simmer for 10
minutes, skimming off the foam which will form on top.
Cool syrup.
Beat together shortening and oil until light. Gradually add orange
juice and sugar. Sift together all-purpose flour, baking
powder and soda. Slowly add this to oil mixture. Beat thoroughly.
Finally, add cake flour and nuts. Knead to form a soft
dough. Roll into 6-inch long strips which are 1 inch in diameter.
Cut on the diagonal into 1-inch long pieces. Place on
ungreased cookie sheets. Bake in a preheated 325 degree oven for 30
minutes, or until golden brown. Dip hot cookies
into cool syrup with a slotted spoon.
