Lentil Soup
Serves 4 to 5
3 c. lentils
2 qt. water
1 c. oil
8 oz. can tomato sauce
2 cloves garlic, chopped
1 med. onion, chopped
2 to 3 stalks celery, sliced
2 med carrots, chopped
1 bay leaf
1 sprig fresh rosemary or ¼ tsp dry rosemary
Salt & pepper to taste
Vinegar (optional)
Clean and wash lentils. Place in large pot and add remaining
ingredients (except vinegar). Cover and bring to a boil.
Reduce heat and simmer for 1 ½ hours. Serve with a dash of vinegar
if desired. Serves 4 to 5.
