Lenten Cake
1 ½ c. salad oil
1 ¼ c. sugar
Juice of 3 oranges
1 jigger whiskey or cognac
3 c. flour
½ t. cinnamon
½ t. cloves
1 t. baking powder
Grated rind of 3 oranges
1 c. walnuts, coarsely chopped
½ c. golden raisins
½ c. dark raisins
Powdered sugar
Beat together oil and sugar. Add orange juice and whiskey. Mix
cinnamon, cloves, baking powder, orange rind and flour.
Slowly add dry ingredients to oil mixture. If batter seems too
thick, add 2 to 3 tablespoons of water. Add nuts and
raisins. Pour batter into greased bundt pan. Bake at 250 degrees for
30 minutes, then at 300 degrees for another 30
minutes until toothpick comes out clean. Cool cake. Sprinkle with
powdered sugar.
