Lenten Cake III
3 ½ c. flour
3 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 c. white raisins
1 c. chopped walnuts
1 c. sugar
¾ c. vegetable oil
1 ½ c. orange juice
3 t. cognac or brandy
2 t. grated orange rind
½ c. orange marmalade
Sift together baking powder, baking soda and cinnamon in a bowl.
Make a well in the center. Beat in sugar, orange juice,
oil, cognac and orange rind until blended. Then stir in raisins and
orange marmalade. Batter will be stiff. Pour into a
greased angel food pan (tube) and bake in a preheated 350 degree
oven for 45 minutes to 1 hour. As soon as cake is
removed from oven, pour over the following mixture: ½ cup orange
juice and 1 cup confectioners' sugar. Cut into slices
and serve cold.
