Lenten Cake II
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ c. raisins, white or brown
½ c. chopped walnuts
2/3 c. Wesson oil
1 c. sugar
1 c. orange juice
Confectioners' sugar
Sift flour, baking powder, baking soda and cinnamon. Add raisins and
walnuts. Beat the oil, sugar, orange juice and rind
together. Add dry ingredients, stirring just enough to moisten. Pour
into an oiled 9x13-inch baking pan and bake at 350
degrees for 45 minutes. Sprinkle with confectioners' sugar.
