Kreatopetes
(Meat triangles)
1 lb. round steak, ground
2 T. butter
2 sm. onions, finely chopped
½ c. dry white wine
1 tomato, peeled and chopped
1 tsp salt
¼ tsp. salt
¼ tsp. pepper
1 c. clarified butter (or more, if necessary)
½ c. grated Kefaloteri cheese
1 egg, slightly beaten
¼ c. chopped fresh parsley
2 hard-boiled eggs, finely chopped (opt)
2 T. dry bread crumbs
1 lb. phyllo (see below for triangle method)
Heat 2 tablespoons butter and saute onions until soft. Add ground
beef. Cook until brown. Add wine, tomato, salt and
pepper. Simmer, covered, for 30 minutes. Remove from heat. Cool
slightly and add cheese, eggs, parsley, bread crumbs
and hard-boiled eggs. Make into triangles. Bake at 350 degrees for
20 minutes. Cool and then freeze if you wish.
