Makes 4 dozen cookies
These cookies are served at all Greek festive occasions, especially
weddings, baptisms and name-day celebrations. The
powdered sugar may go all over you, but the taste is well worth it.
1 lb. unsalted butter
¾ c. toasted, finely-chopped almonds
1 egg yolk
¼ c. powdered sugar
6 c. sifted flour
Whole cloves for garnish
Melt butter over low heat. Cream butter with electric mixer until
cool and begins to turn a light yellow. Add powdered
sugar and egg yolk. Continue beating until light colored. Add flour
gradually. Knead dough for a few minutes, until
dough is smooth. Add nuts and knead until thoroughly mixed in dough.
Allow dough to rest in refrigerator for an hour.
Remove and form cookies with small cookie cutter. Stud each with a
clove. Bake on cookie sheet in 350 degree oven for
15 to 20 minuts. Sift confectioners' sugar generously over cookies.
