Kourabiethes I
Makes approximately 60 cookies.
These little cakes were served by my mother always on Christmas and
New Year's Day.
1 lb. unsalted butter
½ c. powdered sugar
2 egg yolks
1 tsp. baking powder
1 shot glass rye whiskey
5 c. sifted all-purpose flour
1 c. broken walnut meats
Confectioners' sugar for coating cookies
Beat butter and sugar until creamy and very light in color. Add egg
yolks and whiskey; continue to beat. Sift baking
powder with flour and gradually add to butter mixture. Mix until all
flour is absorbed and dough is smooth. Stir in alnut
pieces. Roll into small balls and bake in preheated 350 degree oven
for 15 to 20 minutes, or until lightly golden in color.
Remove from oven and dredge completely with sifted confectioners'
sugar. Allow cookies to cool completely with sugar
before storing in container.
To Freeze: (unbaked): Place on cookie sheet, freeze until solid,
then stack in containers. Bake directly from freezer at
350 degrees for 45 minutes to an hour. (Baked): Cool and freeze
before rolling in powdered. Sugar. Thaw at room
temperature. Roll in powdered sugar.
