Chicken Kapama
1 chicken
Salt & pepper
Cinnamon
6 T. butter
1 can whole tomatoes
1 sm. can tomato paste
1 can water
2 cinnamon sticks
1 clove garlic
1 lb. macaroni
Grated Parmesan cheese
Cut chicken into pieces. Sprinkle with salt, pepper and cinnamon.
Melt 2 tablespoons butter in pan and sauté chicken
until golden.
In a separate pan, combine 1 can whole tomatoes, tomato paste,
water, 2 cinnamon sticks and garlic. Bring to a boil and
add chicken pieces. Simmer until chicken is tender.
Boil macaroni. Drain and put in serving dish. Brown 4 tablespoons
butter and pour over the macaroni. Add grated
cheese and top with sauce. Serve chicken separately.
