Kalamaria
Squid with Wine
Serves 2 to 3 as entree

1 lb. squid
½ c. sliced onions
2 T. olive oil
1 c. stewed tomatoes
¼ c. dry white wine
Salt & pepper to taste

Clean squid and wash several times in cold water. Remove claws from heads. Cut squid into bite-size pieces. Cook
onions in olive oil until soft. Add squid, tomatoes, wine and pepper. Continue to sauté until squid is soft and tender,
approximately 20 minutes. Since squid is salty, do not add salt until dish is ready to serve, then salt to taste.
