Hummus
1 lb. can chick peas drained & rinsed
¼ c. olive oil
½ c. fresh lemon juice
Salt & pepper, to taste
3 to 4 cloves of fresh garlic, crushed
2 T. tahini
Blend chick peas in blender to form a smooth puree. Add lemon juice
and oil, leaving blender on during the entire time.
Stir in garlic and blend for a few seconds more. Remove 2
tablespoons of tahini from the can and stir the tahini until
smooth. Then add it to the blender and puree the mixture for a few
more seconds.
The hummus should be made one or two days in advance to allow the
flavors to mellow. It is delicious served with
crackers or raw vegetables.
