Hubbard or Sweet Potato Squash

3 lb. squash or sweet potatoes
1 stick butter
2 T. brown sugar
White pepper to taste
1 tsp. nutmeg
Orange juice

Cut squash or sweet potatoes in half. Place cut-side-down in baking dish in ½ inch of water. Steam for 20 minutes.
Remove skins. Mash and add rest of ingredients and enough orange juice to make it the consistency of mashed
potatoes. Mix well and put into a greased casserole.
