Cheese Rolls
Makes 36 pieces
This is a very popular cheese pie. The three cheeses blend
beautifully with parsley. In this case, it is formed into
convenient rolls for small individual appetizers.
6 oz, cream cheese
½ c. Feta cheese, crumbled
2/3 c. grated Gruyere cheese
3 T. chopped parsley
2 eggs, well beaten
½ lb. phyllo (see section on roll method)
1 c. melted butter
Beat cheeses together until creamy. Add parsley and eggs. Continue
beating until fluffy. Cut phyllo into fourths, across
width. Place one teaspoon of filling on phyllo. Roll up edge over
filling. Roll in sides. Roll to other edge. Butter top.
Bake on tray in preheated oven at 425 degrees for 10 minutes.
