Saganaki
(Fried Kefaloteri Cheese)
This cheese is hard and salty and it is ideal for frying since it
doesn't melt. Cube Kefaloteri cheese. Coat with flour and
fry in hot butter until brown. Squeeze fresh lemon juice over before
serving. Serve hot.
Fried Cheese Balls
Makes 3 dozen
1 egg white
2 c. grated Kefaloteri cheese
Fat for frying
Beat egg white until stiff. To 1/3 of stiffly beaten egg white, add
1 cup cheese and beat. Add remaining egg white and
cheese alternately, beating constantly until thoroughly mixed. Shape
into balls the size of a dime and fry in hot deep fat
(365 degrees) until golden. Drain on absorbent paper and serve warm.
