Flame Broiled Kasseri Cheese
Serves 6
Kasseri cheese is a favorite Greek cheese of mine. It is light in
color and medium in consistency - never dry.
1 lb. Kasseri cheese
2 T. melted butter
2 T. brandy
Juice of ½ lemon
Cut cheese into 3 wedges and arrange on buttered broiler pan. Pour
melted butter over cheese. Broil 4 to 6 inches from
heat until cheese is bubbly and golden. (At this point, cheese and
butter can be placed in ovenproof dish or chafing dish
to flame at table. Then you will warm brandy first.) Pour brandy
quickly over hot cheese and ignite immediately.
Squeeze lemon juice over cheese as flame begins to die. Cut wedges
in half and serve.
