Green Pepper Appetizer
Serves 12
6 lg. Green peppers
1 med. onion, thinly sliced
1 tsp salt
¼ tsp. pepper
3 T. cider or wine vinegar
½ to ¾ c. olive oil
1 tsp. oregano
Place peppers on baking sheet and bake in 450 degree oven for 20 to
30 minutes, until softened and blistered brown on
skins. Peel off outer skin and remove seeds. Cut peppers into
strips, place in bowl and add remaining ingredients. Stir
gently. Pour into a glass jar, cover and refrigerate. Remove an hour
or so before serving.
