Green Bean Salad with Anchovies
1 ½ lb. fresh green beans
1 med. onion
1 clove garlic
½. c. grated Kefaloteri cheese
Dressing
6 T. olive oil
2 T. vinegar (tarragon preferred)
1 tsp. Dijon mustard
1 tsp. salt
Ground pepper to taste
Bring salt and water to boil. Cook string beans for 12 minutes.
Spray cold water on beans and drain. Chop onion and
garlic. Place in bowl. Mix drained beans with onion and garlic. Add
cheese and pour dressing over entire mixture.
Garnish the bowl with anchovies rolled with capers.
