Garlic Spread with Walnuts
This is a garlic lover's delight. Always serve chilled.
3 c. vegetable oil
7 to 8 cloves garlic, crushed
½ c. vinegar
3 med. potatoes, boiled & mashed or use 2 ½ c. moist bread crumbs
Salt & pepper, to taste
½ c. finely-chopped walnuts
Beat oil and potatoes with electric mixer in a bowl. Add other
ingredients, beating until very thick and creamy. Delicious
with fried eggplant or zucchini.
