Finikia (Orange Cookies soaked in syrup)
Makes 65 cookies
½ lb. unsalted
1 T. Crisco shortening
¼ c. sugar
½ c. Crisco vegetable oil
4 c. flour (or more)
½ c. orange juice
2 tsp. baking powder
¼ tsp. baking soda
Pinch of cinnamon
Rind of 1 orange, finely grated
1 tsp. vanilla
3 ½ oz. pkg. finely-ground pecans
Cream butter and sugar. Add shortening and oil and cream for 5
minutes. Add orange rind, orange juice, vanilla and
cinnamon . Beat for another 5 minutes. Sift together flour, baking
powder and baking soda. Add mixture gradually to
butter mixture until thoroughly blended. Shape into small balls.
Bake in preheated 300 degree oven for 35 minutes. Dip
hot cookies into cool syrup and leave cookies in syrup for 30
seconds. Roll cookies in mixture of ground nuts with clove
and cinnamon to taste.
Syrup:
¾ c. honey
1 ½ c. water
1 ½ c. sugar
Place in saucepan and boil 15 to 20 minutes, continuously removing
foam as syrup boils.
