Shrimp with Feta Cheese
2 lb. med. shrimp
2 T. fresh lemon juice
3 T. olive oil
¼ c. minced green onions
1 tsp. minced garlic
½ c. canned tomato sauce
2 lg. tomatoes chopped, peeled & drained
½ c. chopped fresh parsley
½ c. chopped basil leaves
1 c. Feta cheese, crumbled
Wash and drain shrimp. Remove shells, leaving tails intact, and
devein shrimp. Dry and place in bowl with lemon juice.
Toss. Heat oven to 400 degrees. In a large, range-top-to-oven
skillet, heat oil. Saute onions and garlic until soft. Add
tomato sauce, tomatoes, parsley and basil. Simmer 15 to 20 minutes,
stirring frequently. Add shrimp and liquid to tomato
mixture and toss well to combine. Cook 3 to 4 minutes, stirring
constantly, until shrimp begin to turn pink. Remove from
heat. Sprinkle with cheese and bake 10 to 50 minutes until shrimp is
tender.
