Split Pea Soup
1 lb. yellow split peas
1 med. onion, chopped
1 clove garlic, minced
½ c. olive oil
Salt & pepper to taste
Vinegar
Olive oil
Cover split peas with water in heavy saucepan. Bring to a boil.
Reduce heat and simmer for 1 hour. Add onion, garlic,
salt, and pepper; cook until soup thickens and split peas are pureed
stirring constantly. Serve with olive oil and vinegar.
