Fasolatha
(Bean Soup)
2 lb. Northern beans
1 lg. Onion, chopped
½ c. olive oil
3 lg. Carrots, chopped
3 stalks celery, chopped
Salt & pepper to taste
¼ c. tomato paste or ½ c. tomato sauce
2 cloves garlic
Place beans in large saucepan. Cover with cold water. Bring to a
boil and cook for 5 minutes' drain beans. Cover with
warm water and bring to a boil for 5 minutes; drain. Cover with warm
water and cook until beans are cooked. Saute
onions, carrots, celery and garlic in oil. Add tomato paste or
tomato sauce. Season with salt and pepper. Add the
vegetables to the beans. Add more water as necessary. Simmer for ½
hour.
