Greek Baked Beans
1 lb. Northern white beans
2 lg. onions, chopped fine
1 clove garlic, minced
¼ c. vegetable oil
¾ c. olive oil
16 oz. can tomato sauce
Pinch of paprika
Wash and sort beans. Saute onions and garlic in ¼ cup oil. Combine
beans and onion mixture in a large Pyrex baking
dish. Add ¾ cup olive oil. Sprinkle with paprika. Add 1 quart
boiling water. Bake in a preheated 400 degree oven for 1 ½
hours, or until water evaporates. Stir and add another quart of
boiling water. Bake another ½ hour, until water is reduced
to barely cover the beans. Add tomato sauce and salt to taste.
Reduce oven temperature to 325 degrees and bake for
another 30 minutes or until a skin forms on top of casserole.
