Chicken with Cheese
¼ c. butter
3 lb. frying chicken, cut up
1 med. onion, chopped
Salt & pepper to taste
1 clove garlic, minced
1 tomato, chopped
1 c. chicken broth
¼ lb. Kasseri cheese, cut into cubes
Melt butter. Saute chicken pieces and onion. Season with salt and
pepper. Add garlic, tomato and chicken broth. Cover
and simmer for 45 minutes or until almost tender. Add the cheese and
cook for another 10 minutes. Serve over rice.
