Braised Potatoes
6 to 8 medium potatoes
¼ c. olive oil
1 med. onion, chopped
2 cloves garlic, minced
Pinch of cinnamon
2 c. Italian plum tomatoes, chopped
4 T. parsley, chopped
Salt & pepper to taste
Peel potatoes, cut in half and soak in cold water. Saute onion in
olive oil until soft. Drain potatoes. Add potatoes and
remaining ingredients to pan. Add water to cover the potatoes. Cover
and simmer for 30 to 45 minutes or until done.
Uncover and continue cooking till sauce thickens, turning potatoes
occasionally.
