Candy Bizethes (Meringue Cookies)
1 box confectioners' sugar, sifted, minus 2 t.
1 t. fresh lemon juice
3 fresh egg whites
Chopped pistachio nuts or colored candies for garnish
Beat egg whites until very stiff, gradually adding lemon juice and
confectioners' sugar, 1 tablespoon at a time. Line a
cookie sheet with waxed paper and drop by the teaspoonful. Sprinkle
with chopped pistachio nuts or colored candies.
Bake in a preheated 200 degree oven with the door ajar for 1 hour.
