Baked Macaroni with Feta Cheese
½ lb. macaroni
Bread crumbs
2 c. grated cheese (Parmesan, Romano, or Kefalotiri)
¼ c. butter, melted
½ lb. Feta cheese, crumbled
2 c. milk
4 eggs, beaten
Cook macaroni and drain well. Butter a 10-inch square baking pan and
sprinkle with bread crumbs and a little grated
cheese. Combine macaroni with ¼ cup melted butter and Feta cheese.
Place in pan. Sprinkle with bread crumbs and the
grated cheese. Combine milk and beaten eggs. Slowly pour over
macaroni. Sprinkle top with more grated cheese. Bake
in a 350 degree oven for 30 to 40 minutes or until top is lightly
browned and a soft crust has formed.
