Vegetables Artemes
¼ c. olive oil
1 lg. onion, chopped
2 cloves garlic, minced
½ c. parsley, minced
1 lb. vegetables: peas, green beans, eggplant, okra,
potatoes, zucchini
8 oz. can tomato sauce
Salt & pepper
Saute, garlic, onion, parsley in the olive oil. Add the vegetable of
your choice which has been peeled or sliced as
necessary. Add tomato sauce and enough water to barely cover. Season
with salt and pepper. Simmer until vegetables
are tender.
