Almond Paximadia
3 c. flour
3 tsp. baking powder
½ tsp. salt
1 stick sweet butter
1 c. sugar
3 eggs
1 c. chopped almonds
Mix and sift flour, baking powder and salt. Cream butter with sugar
and add eggs, one at a time. Beat well. Stir in dry
ingredients and almonds. Shape into 4 slightly-flattened loaves. Put
on greased baking sheet. Bake at 350 degrees for
30 minutes. Remove to cutting board and cut into ½-inch slices.
Place on baking sheet, cut side up. Toast on both sides
until golden brown. Dust with powdered sugar.
