Turkey Encore
A great recipe for the leftovers: Heat oven to 350 degrees. Makes
6 servings.
1 pkg. (10 oz.) frozen broccoli spears, thawed and drained
¾ cup Bisquick baking mix
¾ cup milk
1 egg
1 can (10 ¾ oz.) cream of mushroom soup
2 cups cut-up cooked turkey or chicken
1 cup shredded Swiss cheese
1 jar (2 oz.) diced pimientos, rinsed and drained, if desired.
1) Arrange broccoli crosswise in rectangular dish, 11x7x1 ½”. Mix
Bisquick, milk, egg and soup; beat 30 strokes with wire whisk. Pour
over broccoli in center of dish.
2) Sprinkle with turkey, cheese and pimientos.
3) Bake until center is almost set, about 30 minutes. |
