Corn Puffs
1/2 cup yellow cornmeal
1/4 teaspoon salt
1/2 cup boiling water
2 egg whites
Preheat the oven to 375 degrees F. Grease a baking sheet.
Combine the cornmeal and salt in a bowl. Pour the boiling water over
the mixture, stir, and cool. Whip the egg whites until stiff and blend
into the cornmeal mixture. Drop by teaspoonfuls on the prepared baking
sheet. Bake for 30 minutes or until the puffs are browned and crispy.
