Granola Chocolate Cherry Bread
1 1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 egg
1 cup granola breakfast cereal
1/2 cup chopped almonds
1/2 cup semisweet mini chocolate chips
3/4 cup chopped candied cherries
Preheat oven to 350 degrees. Grease and flour an 8 1/2 x 4 1/2 inch
loaf pan.
In a bowl mix the flour, sugar, baking soda and salt. In a second
bowl blend the buttermilk, oil, vanilla, and egg. Stir in the dry
ingredients just until blended. Fold in the granola, almonds, chocolate
chips, and cherries. Spoon the mixture into the pan. Cook for 55-60
minutes. Let cool in pan for 10 minutes, remove and finish cooling
on a rack.
