Bavarian Almond-Apple Torte

For Crust:
1/2 cup margarine
1/3 cup granulated sugar
1 1/2 cups sifted all-purpose flour
1/4 tsp vanilla

Filling:
1 (8 oz.) Cream Cheese
1/4 cup sugar
2 eggs
1/2 tsp vanilla

Topping:
4 cups peeled thinly sliced apples (3 large apples)
1/3 cup granulated sugar
1/2 tsp cinnamon
1/2 cup apricot preserves
2 tbs water
1/4 cup sliced almonds

To make crust: In mixing bowl, place margarine, flour, sugar and vanilla; mix on medium speed of electric mixer until blended. Pat into the bottom and up sides of a 9 inch spring form pan. (about 1 inch and 1/4 up sides).

Bake in a preheated 400 degree oven for 5 minutes. Remove and allow to cool about 5 minutes.

To make the filling: In a mixing bowl place cream cheese, eggs, sugar and vanilla and mix well. Pour into crust. Toss the apple slices in sugar and cinnamon, then place on the cream cheese filling. Top with the sliced almonds. Back in 400 degree oven for about 25 minutes or until apples are done. Let it cool.

When cake is cool, melt apricot preserves with the water and then brush top of tore to give a high glaze.
